“Natural colours for food use. Vegetable extracts and foodstuff based on anthocyanins and betalains”.
The purpose of this webinar is to review the two main natural sources of red food colouring (anthocyanins and betalains), understanding what they are and where they are found, understanding the impact they have on human health, which alternatives the market currently offers, which technological characteristics do they present, which are their applications and which are the main quality control parameters. Furthermore, learning its limitations and the research lines in which we are currently working to develop the natural colours of the future.
